Roasted Garlic Pasta Salad with White Beans and Spinach

Here’s another vegetarian dish for you (actually, if you skip the cheese on top, it’s a vegan dish!)… You’re shocked, I’m sure! When I was trying to pick out my vegetarian menu last week, I handed my hubby a few cookbooks and told him to pick out some dishes that sounded good.  I figure, if…

Balsamic Roasted Pears

I don’t love salads… Especially ones with a lot of lettuce. I know that I have admitted that before… And, it’s pretty prohibitive when it comes to trying to incorporate more salads into my diet and cut back on meat. Though I would love to replace meat with pasta and cheese and dine on that…

Creamy Carrot and Potato Soup

I loooove this soup!

That’s what I used to tell my mom when she made this soup for me when I was a kid… And, now that I’ve made it myself, I’m still raving about how much I love this soup!

I guess I should start at the beginning. Long before Lonely Island proclaimed their love for being on a boat, there were Bert and Ernie… You know who I’m talking about – from Sesame Street! Perhaps this clip will jog your memory a bit…

I watched quite a bit of Sesame Street in my day. So, when my mom made this carrot and potato soup for me when I was a kid, I would walk around letting everyone know how I felt about the soup, Ernie style. In fact, my mom has a handwritten note in her cookbook that says “Jenny LOVES this soup!” (Yes, I was known as Jenny back then, too… And, there may be a few people who still call me that.)

Balsamic Glazed Skillet Potatoes and Brussels Sprouts

I am always looking for new ways to prepare vegetables. During the winter, I typically do a lot of roasting. Who doesn’t love roasted vegetables?

The thing is, sometimes I don’t plan ahead of time. Roasted vegetables take time and require preheating the oven. That’s when I usually turn to a skillet. Lately, I’ve been using my cast iron skillet a lot, and let me tell you, it preheats much more quickly than my oven does!

Last week, I received a sample of Tasteful Selections potatoes. It’s not often that I receive samples of fresh produce, so I jumped at the chance. From the moment they arrived, I couldn’t wait to start cooking with them. I was especially drawn to the Sunrise Medley that contained gold, red, and purple potatoes.

Sweet Potato Chili

Lately I’ve been in a bit of a cooking slump. I can think of lots of things that I’d love to bake, but since I cannot live on cake, cookies, and cupcakes alone (don’t I wish!), I’ve been forced to try to fight through my lack of inspiration and cook anyway.

When I’m feeling uninspired, I tend towards pizzas, frittatas, and soups… They are all of my “blank canvas” foods that lend themselves well to whatever’s in the fridge. I’ve found myself making a lot of them lately… Especially soups. The cooler weather that we’ve been having just begs for soup, if you ask me.

Spaghetti-Os… My way!

While walking through Pike Place Market in Seattle with Mardi and Kelly, we stumbled on an Italian market with a lovely selection of artisan pastas imported from Italy (along with a beautiful assortment of olive oils, Balsamic vinegars, and other things that I knew would weigh down my suitcase too much).  I knew I would…

Friday Favorites – Episode 62

Last week I wasn’t able to write my Friday Favorites post… But, I had a good reason!  We were camping (and by camping, I mean renting a cabin) in the woods, and I had no cell phone or internet access. Honestly, it was relaxing to be offline for a few days. Now that I’m home,…

Grilled Vegetable Tacos

We’ve been making a conscious effort to eat more vegetarian meals throughout the week. In comparison to many families, we don’t eat a lot of meat. But, I think we can do better. My goal is to cut back to having fish/poultry 1-2 times a week and meat no more than 1 time a week….

Pasta e Fagioli Soup with Kale

The best thing about slow cooker recipes is that I usually have leftovers. When I take the time to prepare a meal in my slow cooker, I always make sure to make a large batch so that I can use it later in the week or pop it into the freezer for a quick meal on…

Friday Favorites – Episode 46

I am happy to announce that I have not let my RSS reader get out of control again this week. In fact, for about 5 minutes during the middle of the week I achieved the ultimate RSS reader goal – ZERO unread items. It was very short-lived, but I enjoyed it while it lasted. So,…
