Challenge: Eggs (Kitchen Bootcamp January/February)

Kitchen_Bootcamp_Logo.jpg

I’ve taken a bit of a break from the Kitchen Bootcamp challenges over the holidays (and a few weeks after the holidays, too!).  I’m pretty sure I wasn’t the only one who had a busy schedule and not too much time to worry about sharpening my kitchen skills and trying new things! But, that’s all…

Friday Favorites – Episode 119

FridayFavorites_new.jpg

The second week of January is here… In fact, it’s almost over! And, I’m still waiting for some snow. I’m one of those crazy people who really enjoys snow in the winter. I could go for a foot or two right about now. Instead, it’s just been kind of dreary and rainy here. All of the…

Sweet Potato and Collard Greens Frittata with Smoked Cheddar… On Bluebonnets & Brownies

SweetPotatoCollardsFrittata-250px

Nope, this isn’t grilled cheese! I know I promised you a grilled cheese recipe this week using the lovely sourdough bread that I shared on Monday. But, there’s been a slight change in plans. Instead, today I’m guest posting over at Bluebonnets & Brownies, and I wouldn’t want to distract you with grilled cheese and…

Friday Favorites – Episode 118

FridayFavorites_new.jpg

Happy first Friday of 2012! I’m still adjusting to the fact that the holidays are over, and the new year has arrived already.  Where did the time go? While I’m still trying to figure out where the holidays went, I can say that I’ve had my fill of cookies and sweets.  I didn’t make any crazy resolutions about…

Italian Sausage and Egg Bake

2011-12-29_ItalianEggCasserole-250px

I have mixed feelings about the time after New Years… I always feel a bit of sadness taking down the Christmas decorations.  Once the tree comes down, there’s no denying that the holiday season is over.  But, at the same time, I enjoy the quietness of the winter months that follow the holidays. I look forward…

Chocolate Ice Cream Base

2011-09-12_ChocolateIceCream-250px

Last summer, I finally figured out the whole homemade ice cream thing. After a year or two of icy homemade ice cream that turned into a brick when I popped it into the freezer, I finally realized that starting with a custard base was the way to go. I’ve been making lots (and lots) of…

Decadent Chocolate Bread Pudding

2011-05-23_ChocolateBreadPudding-250px

To me, warm bread pudding is the ultimate comfort food… Especially if its rich and gooey chocolate bread pudding! I’m one of those people who can be kind of picky about food textures.  I’m not a fan of oatmeal, and I always gobble my cereal as quickly as possible (when I eat it at all)…

How To Hard Boil Eggs (WFMW)

2011-04_13_HardBoiledEggs-250px

For a long time, I was afraid of hard boiling eggs.  I’m not really sure why… I guess I just had a few bad experiences. I’m sure I’m not the only one, right? When you walk away for a minute and come back and all of the eggs have exploded in the hot water? OK,…

Apple Bacon Cheddar Frittata (Whole Family Cookbook)

2011-03-28_ABCFrittata-250px

Frittatas are one of my favorites for quick and easy meals throughout the week. With all of the frittatas I’ve made over the years (lots and lots of them!), I have never thought to add fruit. Fortunately, my good friend Michelle over at What’s Cooking with Kids is a bit more creative than I am! In her new…

Chicken Sausage and Egg Casserole

2010-10-27_SausageCasserole-250px

Remember how I said I have been lacking cooking inspiration in the kitchen lately? It seems that my lack of inspiration has also extended itself to blogging. Do not fear… I go through these stages periodically. I find that the best way to get through it is to just push on through and keep writing. So, that’s exactly what I’m doing.

I have a funny thing about food textures. Many of the foods that I’m not too fond of are those that have a texture that I don’t like (mushy cereal, for example)… It has very little to do with the flavor. So, due to my hatred of mushy and soggy things, I have avoided egg and sausage casseroles for years. The thought of bread soaking in eggs and milk just didn’t sound appetizing to me.

A few weeks ago, though, I had some stale bread on hand and for some reason I was feeling especially brave. I decided to tackle the dreaded egg and sausage casserole since I know it is such a popular holiday dish (and I was also lacking cooking inspiration at the time). When all was said and done, it turned out to be pretty tasty. In fact, it was tasty enough that I made it again last week and even took the time to take a few pictures and keep track of the recipe.
