Kitchen Bootcamp Roundup – Eggs and Breakfast

This month’s Kitchen Bootcamp challenge focused on eggs and other popular breakfast foods! I admit that it was a selfish pick on my part because I wanted a challenge that I could handle without too much stress and effort.  I really enjoyed seeing what everyone else made, though… Breakfast has been one of my favorite meals to prepare lately, and I’m looking forward to giving these breakfast recipes a try!

For my contribution to the challenge, I made a simple Apple, Zucchini, and Cheddar Frittata that not only works well for breakfast, but can also be served as a quick lunch or dinner!

Prosciutto and fresh mozzarella are two of my favorite foods… So, when you give me a reason to eat them for breakfast, I am all in! I can’t wait to try this Pizza Frittata with Proscuitto and Fresh Mozzarella from Studio Cuisine.

I often make a big batch of ratatouille with veggies from our CSA… Then I find that I have more leftovers than I know what to do with.  As someone who prefers to create new things with my leftovers, I am excited to try this savory Ratatouille Clafoutis from eat. live. travel. write.

Pancakes happen to be a favorite in my household… And, we’ve certainly been eating our share lately.  I will have to give these Perfect Pancakes from Mommy’s Sweet Confessions a try.  Perhaps we will have breakfast for dinner one night next week!

I’m so glad that someone made quiche! I wanted to make one, but I got tired. I hear it’s pretty common when you’re about 8 months pregnant. Exhaustion aside, I am now craving this Quiche Lorraine from Being a Bear. You can’t go wrong with bacon and Gruyere. I’m just saying.

    I made breakfast for dinner just this week! It was Eggs Benedict, and very satisfying. I’m not eight months pregnant, but Quiche Lorraine and bacon and gruyere sound good to me, too!

    Tried the Eggs Benny. Great recipe. The pictures were very definitive. It really helps when you know what things should look like all along the way. Quiche is my next project.

  3. I WANTED to make quiche also but I just ran out of time. As the weather gets cooler, I think I am definitely putting that on the roster soon. Loved this roundup – such creative entries Jen!

  4. For me the best use of egg and bread is for making sandwich. I love egg & bread sandwiches. Pancakes are also good for breakfast.
