Kitchen Bootcamp Roundup – Salads

This month, I picked a seasonal topic for my Kitchen Bootcamp challenge… Salads! This is the time of year where I generally get more lettuce than I know what to do with from my CSA, so I was happy for some salad inspiration!

For this month’s challenge, I made a homemade Buttermilk Ranch Dressing with Garlic Scapes and Herbs.  I loved the refreshing taste it added to my salads.

This Wilted Spinach Salad with Goat Cheese, Olives, and Lemon Vinaigrette from eat. live. travel. write. is anything but boring.  I love all of the flavors in the recipe, and I can’t wait to give it a try!

I am loving all of the recipes highlighting Greek flavors for this month’s challenge.  These Greek Salad Rolls from A Little Bit of Everything are calling my name.

I am a huge fan of avocados, and I especially love them in salads.  I am looking forward to giving this Avocado, Tomato, and Roasted Red Pepper Salad from Studio Cuisine a try. The honey lemon vinaigrette paired with the salad sounds very tasty, too!
