Friday Favorites – Episode 135

Friday is here again… And, if knowing that the weekend is right around the corner isn’t enough, I’ve got a handful of great new recipes for you to try! What could be better?

  • I love rhubarb, but my hubby does not.  So, I don’t get to make a lot of rhubarb recipes.  But, if I did, I’d be making this Rhubarb Crumble Pie from Tracey’s Culinary Adventures.  I may make it anyway… I just run the risk of eating the whole thing myself!
  • Enchiladas are a favorite meal at my house, loved by both my husband and me alike. As soon as I saw this Red Enchilada Sauce from Gimme Some Oven, I knew that I just have to give it a try. Now, if I could only decide on a filling to put in the enchiladas, I’d be set!
  • Ice cream sandwiches were one of my childhood favorites (well, and college too… that counts as childhood, right?)… I’ve often contemplated making some of my own, but I never really got around to it. After seeing these Old-Fashioned Ice Cream Sandwiches from Brown Eyed Baker, I am adding them to the to-do list for this summer.  After I try some vanilla ones, I am thinking some homemade mint chocolate chip ice cream would be a tasty variation, too!
  • Along with nice medium steaks and plenty of gorgonzola cheese, this pregnant lady is really missing cocktails.  While I know it will be a while before I can sip on a mojito, I am looking forward to making some Strawberry Watermelon Agua Fresca from Nutmeg Nanny (with seltzer instead of wine, of course). It sounds so refreshing that I’m not sure I’ll even miss having a cocktail!
