It’s February… How are those New Years Resolutions coming?

Actually, I’m just joking. I didn’t make any resolutions this year. And, I’m a firm believer that you shouldn’t just wait until January to make small changes to your diet, life, or whatever else you feel needs improvement.  Next January is 11 months away!

Instead of making big resolutions that I am likely to break (who am I kidding?), I do my best to make small changes throughout the year. One of the areas that I find usually needs the most improvement is snacking.  I do pretty well with making healthy meals, but when late afternoon hits, all bets are off. If there’s any chocolate in the house (especially brownies!), I am all over it.

So, lately I’ve been focusing on making some healthier snacks. Having healthy snacks on hand certainly helps to keep me from grabbing a handful of chocolate chips from the pantry… Or eating half a pan of brownies.

It’s simple to keep snacks on hand, so today I thought I’d share a few of my favorites!

Peanut Butter Chocolate Chip Granola Bars

Right now, I’m mildly obsessed with homemade granola bars.  I came up with a new recipe for peanut buttery chocolate chip granola bars that have no other additional sweeteners in them.  They may not be diet food, but they are a good alternative to snacking on brownies!

    I need to do a better job of incorporating more healthy snacks into my diet. If they were all as good as these granola bars, there would be no issues at all.

    I have been on a popcorn kick lately. Which, is really not all that bad as long as you don’t pour honey butter all over it. So I have gotten used to (gulp) olive oil and sea salt as a topping…and it’s kind of growing on me! These look delicious!

    I left a comment over at sugarcrafter but I was wondering how to store these after making them? I’m wanting to ship them across country and wondering if you think they’d survive/last?

    1. E – Thanks for your comment… I have stored them up to 2 weeks in an airtight container. To ship them, I’d wrap them well in waxed paper and then again in plastic wrap to make sure they are packed well. They are pretty sturdy, but shipping can be traumatic for baked goods!
