Friday Favorites – Episode 113

I’ve still got Thanksgiving on the brain… Consider yourself warned!

I still haven’t figured out my menu for Thanksgiving… I’ve got plenty of ideas, but haven’t made any final decisions yet. I’m just having too much fun exploring new recipe ideas! Since I know a lot of you are planning your own Thanksgiving meals, I thought I’d share a few more of the recipes that have caught my eye. Research can be so tasty!

  • Normally I’m not one to make a big deal out of salads… I’m not a big salad fan. But, lately I’ve become a huge fan of roasted veggies on my salads. This Roasted Butternut Squash Salad with Warm Cider Vinaigrette from Brown Eyed Baker sounds just perfect to me. I think it’s elegant enough for Thanksgiving, yet easy enough for any day of the week!
  • I adore all things pumpkin, but not everyone feels the same way. So, I want to have a non-pumpkin dessert option for my guests. Right now this Chocolate Pecan Pie from Chasing Delicious is a serious contender. And, I just love the idea to use a cookie cutter to decorate the pie crust. It’s brilliant!
  • Stuffing has never been my favorite part of Thanksgiving dinner… And, the “usual” variety doesn’t really do it for me. I like stuffing (or is it filling?) to be packed with flavor. This year, I think I might try this Cornbread and Chorizo Stuffing from Handle the Heat. It is certainly not lacking flavor!
  • I can’t get enough apples this year… We signed up for an organic apple CSA, so I’ve been enjoying trying lots of different varieties of apples and using them for all sorts of cooking and baking. With our next box of apples, I will be giving these Baked Apples with Cider Rum Sauce from Hungry Rabbit a try.

  2. i cannot get enough roasted veggies these days. i love putting them atop a bed of spinach, drizzling a bit of dressing (olive oil, balsamic + honey is my favorite) and calling it dinner! so delicious… especially when topped with a delicious cheese :)
