As many of you know, I’m headed to the Big Summer Potluck (#BSP2) this weekend! So, since I still need to do some laundry, pack, and wrap up 75 gluten-free sugar cookies I decorated for the event, I’m going to keep this short!

Now, let’s get right to the tasty recipes I discovered this week…
- I just love Mexican food… Especially enchiladas! Since my hubby and I try to eat meatless meals a few nights a week, I can’t wait to try these Vegetable Enchiladas from Dana Treat. They are loaded with flavor, so I’m sure we won’t even miss the meat!
- Normally I’m not much of a wine drinker, but I do love sangria. I suppose it’s basically just a wine cocktail, right? And, I do like cocktails! Regardless, I am excited to give this Peach, Strawberry, and Baby Plum Sangria from Bluebonnets & Brownies a try. Yum!
- I enjoy decorating cookies, but I’m not as good when it comes to venturing away from my beloved round pastry tips. After seeing this Lilac Cake Tutorial from i am baker, I am feeling inspired to break out and try some new things. Amanda makes it look so easy… Like I can do it!
- When it comes to food, sometimes simple is best. Sure, I love a cupcake loaded with chocolate and caramel and all sorts of gooey goodness. But, sometimes vanilla can be even better… Like these Vanilla Bean Cupcakes from My Baking Addiction. I’m not sure I’ve ever seen a better looking vanilla cupcake!
