Peanut Butter Chocolate Chip Cookie Topped Brownies

The hardest part about this recipe was coming up with a name. What do you call fudgy Nutella brownies topped with peanut butter cookies and chocolate chips?

This recipe has been a long time in the making.  I have been seeing the brownie/chocolate chip cookie combinations for a little while.  Then, a few weeks ago, I saw these Chocolate Chip Cookie Brownies from Evil Shenanigans. They have been haunting me ever since.

I was about to make the recipe over the weekend when I realized that I didn’t have all of the ingredients on hand. I didn’t have time to run to the store, either. I was also running a bit low on energy, so mixing up a batch of brownies and a batch of cookies seemed like a lot of work. I realize that it’s not really that much work, but sometimes I’m lazy.

My mind started to wander to some of my favorite easy recipes that I knew I could pull off despite my lack of energy and inspiration… I was in the mood for brownies, but didn’t have much chocolate on hand, so the Nutella Fudge Brownies from Desserts 4 Today (you know the ones… You’ve seen them on Savory Sweet Life and lots of other sites!) seemed like the perfect solution. As I was gathering ingredients for the brownies, I was reminded of my Nanna’s three ingredient Peanut Butter Cookies. Then, it hit me… Why not top the Nutella brownies with some super simple peanut butter cookies? Seemed like a win-win to me!

In the end, I did end up changing both recipes just a bit so that the resulting brownies (or are they cookies?) would have a more consistent texture throughout.  The recipe is still easy, though.  Both the brownies and the cookies can each be mixed up in a single bowl, by hand, in about 15 minutes.  Win!

And, did I mention how great they taste?  Seriously, you can’t go wrong with fudgy Nutella brownies topped with peanut butter chocolate chip cookies. Add a glass of milk, and you have the perfect afternoon snack.

Peanut Butter Chocolate Chip Cookie Topped Brownies
(Makes a round 9-inch pan of brownies, about 10 – 12 servings)

For the brownie layer:

  • 2 tablespoons unsalted butter, softened
  • 1/4 cup sugar
  • 1/2 cup Nutella
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup flour
  • Pinch sea salt

For the cookie layer:

  • 1 cup creamy peanut butter
  • 3/4 cup granulated sugar
  • 1 egg
  • 1/2 cup flour
  • 1/4 cup mini chocolate chips

Preheat the oven to 350°F. Lightly grease a round 9-inch cake pan (or spray with baking spray).

Start by mixing up the brownies. Use a fork to cream together the butter and sugar in a small mixing bowl. Add the Nutella, egg, and vanilla and beat with the fork until smooth.  Add the flour and a pinch of sea salt, and beat until the flour is incorporated. Spread the brownie batter in the bottom of the prepared pan.

For the cookies, combine the peanut butter, sugar, and egg in a mixing bowl, beating until smooth. Stir in the flour and the chocolate chips. The dough will be a bit crumbly, so you can crumble it evenly with your fingers over the top of the brownies.

Bake for about 30 minutes.  Cool for at least 20 minutes prior to slicing.

  26. This recipe looks like it fell down from heaven. Only, I gave up nutella for lent. It was between nutella and butter. And I decided that butter is a necessity in life. So, until then- I’ll have this bookmarked to make! I can only imagine how lovely this must taste. Oh gosh. I miss nutella!
