Valentine’s Day is less than two weeks away… Are you ready?

My husband and I don’t usually go all out with Valentine’s Day… It’s just not our thing. There are no diamonds or extravagant gifts (though I wouldn’t be entirely opposed to that). We usually make a point to get each other a card and (when we remember) a small gift. Instead, we usually make a special dinner together (which is rare) and make some chocolate covered strawberries.

Challenge: Braising and Stewing (Kitchen Bootcamp February)

February is here, so it’s time to announce the next Kitchen Bootcamp challenge! I was thrilled with all of the great soups submitted for the January challenge, and I’m hoping everyone will be just as excited about this month’s challenge…

Since many of us still have a few more weeks of chilly weather ahead of us, I thought it would be a good idea to take on another winter-appropriate chapter. This month, I thought I’d focus on braising and stewing meats (chapter 23 from The Professional Chef)… It’s a technique that I don’t utlize nearly enough, and this month I am determined to change that!

Slow Cooked Lentils with Chorizo

I realize that for someone who spends as much time in the kitchen as I do, you would expect that I could make rice. I would expect that I could make rice. But here’s the thing… I was a stirrer. I would stir and stir away, adding liquid when the rice would star to seem dry. I would end up with rice that would make a great substitute for wallpaper paste.

Everything changed last week. I decided to make these smokey, slow cooked lentils with chorizo in my slow cooker. I originally thought I would make some sourdough bread to go with the dish, but the Spanish-inspired flavors just begged for rice. I had to (finally) learn how to properly make rice, so I decided to go to the best source I know… Twitter!
