South Carolina Pulled Pork Pizza and a Giveaway!

I use my slow cooker a lot throughout the year, but I think it probably gets used the most when January rolls around. Perhaps you can relate…

Though I do my best to stay organized and cook healthy meals throughout the year, I find that I am extra motivated in January.  I get back to my weekly meal planning and plan out healthy meals for the week. One of the ways that I cope with busy weeks is to pull out my slow cooker.  I love meals that can be prepped ahead of time (often the night before), allowing me an entire day free of worrying about preparing dinner.  I also love that most of the meals that I prepare in my slow cooker yield enough food for at least two meals for my husband and I. It’s even better when I can repurpose the leftovers into a new dish with minimal effort!

So, when I was contacted in December about taking a look at Andrew Schloss’s new cookbook The Art of the Slow Cooker, as well as the corresponding iPhone app, I jumped at the chance. I knew it would come in quite handy come the New Year.

I had a blast playing around with the iPhone app (which you will find here in the iTunes App Store). I do love all things iPhone! The app allows you to browse recipes from the book (with photos!), save recipes as favorites, and even add recipe ingredients to a shopping list! In my house, we are big fans of barbeque… And, by we, I mostly mean my husband. Don’t get me wrong…. I do like barbeque recipes, but my husband LOVES them! If I fed him pulled pork and BBQ beef every day, he’d be a happy man. So, I was instantly drawn to the South Carolina Pulled Pork recipe that I found in the app.  And, I decided to make it at the last minute, and I did actually use the shopping list feature, which turned out to be pretty helpful!

The pulled pork was a big hit and my kitchen smelled pretty fantastic as it was slow cooking away.  We enjoyed eating it with some coleslaw and sweet potato fries.  Then, I repurposed the leftovers into a tasty pulled pork pizza (the recipe is at the end of this post!).

Slow-Cooked South Carolina Pulled Pork from The Art of the Slow Cooker

Makes 6 servings

  • 1 tablespoon onion salt
  • 2 tablespoons sweet Hungarian paprika
  • 4 tablespoons light brown sugar
  • 2 teaspoons chili powder
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground black pepper
  • 3 pounds boneless pork shoulder (picnic) or boneless country-style pork ribs
  • 2 tablespoons vegetable oil
  • 3/4 cup apple cider vinegar
  • 2 teaspoons Tabasco sauce
  • 6 large hamburger buns (optional)
  • 1 1/2 cups coleslaw (optional)

Mix the onion salt, paprika, 1 tablespoon of the brown sugar, the chili powder, allspice, and black pepper. Remove 1 tablespoon of the spice mix and reserve; rub the remainder all over the pork. Wrap the pork in plastic wrap and set aside for 1 hour, or refrigerate overnight.

Heat the oil in a large skillet over medium-high heat. Brown the pork on all sides and transfer to a 4-quart slow cooker or larger. Add the vinegar, reserved spice mixture, and the remaining 3 tablespoons of brown sugar to the skillet and bring to a boil, scraping any browned bits from the bottom of the pan into the liquid. Pour over the pork, cover the cooker, and cook for 6 to 10 hours on low, until the pork is fork-tender.

To serve, remove the pork from the cooker, cut into 1/2-inch-thick slices, and shred the slices into bite-size pieces with two forks. Add the Tabasco to the liquid in the cooker. Return the pork to the cooker and toss to coat with liquid. Serve immediately, or keep warm for up to several hours. Serve on soft rolls with coleslaw, if desired.

Leftover Pulled Pork Pizza
(Serves 4-6)

Exact measurements aren’t really necessary for this pizza.  Use your favorites and what you have on hand!

  • Fresh pizza dough for 1 pizza
  • 1/2 cup barbeque sauce
  • 1 1/2 cups pulled pork
  • 1 cup shredded mozzarella cheese
    (cheddar or monterey jack would be lovely, too!)

Place a pizza stone on the middle rack of the oven and preheat the oven to 475°F.  (If you don’t have a pizza stone, you can assemble the pizza on a lightly greased baking sheet or pizza pan and bake on the middle rack.)

Line your pizza peel with a piece of parchment paper, and press the dough out into a rectangle. Spread the barbeque sauce out over the pizza dough and top with the pulled pork. Sprinkle the mozzarella cheese on top of the pulled pork.

Bake the pizza on the stone (on the parchment paper) for about 12 – 15 minutes, until the cheese is bubbly and golden.  Allow the pizza to cool for about 5 minutes prior to slicing and serving.

    My favorite thing to make in the slow cooker is also pulled pork! I have a great bbq pulled pork recipe…so easy! :) I don’t have an iPhone, but I think I could convince my boyfriend to download the app on his so I could check it out. :)

    Great give-a-way! We love our slow cooker and just made a slow cooker chicken jambalaya yesterday that was amazing.

    While we love pulled pork we are also fans of spicy crock pot chili (chicken or beef).

    I love the slow cooker for meatballs, pot roast, beef stew and country style ribs. No iPhone though! Love the creative use of the leftovers on the pizza.

    My favorite way to use my slow cooker is with liner bags. I buy slow cooker liners and the ingredients for a few healthy meals. When I get home from the store I prep all of the ingredients and fill the liner bags with entire slow cooker meals. I label the bags and put them in the freezer. Then, when a busy weekday rolls around I can pull the bag from my freezer, pop the liner into my slow cooker and turn it on! A few hours of prep on a Sunday and I can have 2 weeks of meals without any effort – I don’t even need to clean up since you pop the liner in the trash can when you are done!
    I do have an iPhone :)

    My husband and I make “Crockpot Chicken” which consists of Cream of Mushroom Soup and chicken breasts. When we get home at the end of the day, the chicken is yummy and the soup is the perfect compliment! Add in some veggies and it’s a perfect meal :)

    Believe it or not – the very recipe you posted! Well a version of it, anyway. My mom is from Eastern North Carolina and the pulled pork is very similar. So good!

    I cook at least one pot of beans in my slow cooker each week. Soups are my next favorite, but I’ve also used my slow cooker as an incubator for my yogurt.

    I just started trying to use my slow cooker more and have been trying to find healthier recipes. So far my favorite thing to make has been 40 clove garlic chicken. Yum! I do have an iPhone.

    My slow cooker hasn’t seen much use in recent years, but I just used it two days ago to make a pork shoulder roast! I only seasoned it with salt and pepper, though, and wish I had had this recipe then. Oh well. There will definitely be a next time, as I really enjoyed coming home to a ready meal and a house that smelled fantastic.

    I don’t have any slow cooker favorites yet but am working at building some in the coming months.

    No iPhone here.

    I love to use my slow cooker creatively. I make lasagna, enchiladas, mac and cheese, spaghetti sauce… Even desserts like cobblers and bread puddings! Everything tastes so much better when the flavors are given time to come together in the slow cooker. :)

    I love my crock pot….my favorite is the crock pot Tapioca the recipe is…
    2 quarts milk
    1 cup minute tapioca
    1 1/2 cup sugar
    4 eggs 2 tsp vanilla
    Cook first 3 ingredients in crockpot on high for 3 hours. Beat eggs and vanilla. Add some of the hot mixture then blend all together and cook 20 minutes longer till thick.

    I love making pulled pork in my crockpot, and I have a fantastic recipe for pumpkin, black bean chili (with either turkey or chicken) done the same way. Walking into the house and smelling a fully cooked meal can’t be beat. I’d love to use the book or the app (I have an iphone : ) ).

    I use my slow cooker several times a week to have supper almost done when I get home from work. It is SO nice to not have to think about what to cook after a long day. I make pulled pork on a regular basis, but think I need to try this recipe too.

    I like making stews in my slow cooker. There’s something special about tender, slow cooked meat that has been stewed with veggies and spices. Pure comfort.

    I love making taco soup. I’ll throw everything the stoneware at night and take it out and let it cook during on weekdays. I use a light timer to turn the crockpot on and off at certain times so it never goes too long while I’m not home. Yes I have an iPhone too.
