Simple Chicken Salad

Here’s another one of those simple dishes that I would normally skip over… Proof that I can be lazy in the kitchen just like everyone else!

In last week’s CSA box, we received a lovely bunch of radishes. I can’t honestly say that I’m a real big fan of radishes, but I am determined not to let anything to to waste. I knew I wouldn’t be eating them plain, but I thought I’d probably enjoy them in a salad of some sort.

Fortunately, I had made a whole chicken earlier in the week (in the slow cooker… so easy!) and I had leftover chicken in the fridge. So, this simple chicken salad was born! I threw in some carrots and celery, which I almost always have on hand… It couldn’t have been easier! Served on a butter croissant (no, I didn’t make it… like I said, I was being lazy) with some lovely lettuce from our CSA, it was a lovely way to use up some of the radishes.  Dinner accomplished!

Simple Chicken Salad

  • 2 cups cooked chicken, diced
  • 1/3 cup radishes, quartered and sliced
  • 1/3 cup celery, diced
  • 1/3 cup carrots, diced
  • 2 tablespoons sour cream
  • 2-3 tablespoons mayonnaise (to texture)
  • 1/2 teaspoon lemon pepper seasoning (I happen to like Mrs. Dash)
  • Kosher salt

In a mixing bowl, combine the chicken, radishes, celery, and carrots.  Stir in the sour cream and mayonnaise, adding enough mayonnaise to achieve the texture you prefer (I don’t like my chicken salad too saucy!). Stir in the lemon pepper seasoning and add salt to taste. Refrigerate for at least 30 minutes prior to serving.

  2. I have never tasted a radish. Based on my distaste for all veggies, I’m sure I’d hate it. But in the chicken salad I probably wouldn’t notice. :)

    I always make my chicken salad the same way so it’s nice to see someone else’s version. I think I’d like the radishes in this!

    Way to go on not letting things go to waste. I feel like I resolve to do better about using things up every other week yet always seem to be throwing away food. Your chicken salad looks yummy, especially on that croissant :)

    What a great idea! I just threw out some radishes that I recieved from my CSA after they sat in the fridge for 2 weeks. I have been guilt ridden ever since… Good for you for using those up :)

    We’re starting our CSA in a week or so, and I know what you mean about radishes. I haven’t really been a big fan in the past, but this looks like a good way to incorporate them. I will definitely try this if we do get some radishes in the CSA pickup.

  12. What an awesome chicken salad – I LOVE it. Always very wary of storebought chicken salads but this looks so fresh!

  13. Radishes are wonderful served chilled with a tiny smear of butter, and a sprinkling of some fancy salt.
