POM Yogurt Pops

You know that I love to cook and bake… And I’m not usually intimidated by recipes that might be considered “complicated.”  There’s something about hot weather that just makes me lose my steam in the kitchen, though. I’m not a hot weather fan, and when it’s hot out, I find myself gravitating towards easy and simple recipes.

Earlier this week I picked up a popsicle mold. I remember my mom making popsicles when I was younger, and I had this urge to make some popsicles of my own. These urges happen a lot when I am perusing the kitchen section at just about any store… Especially Target. Originally, I was going to make a custard to freeze in my popsicle mold (which I will probably still do eventually), but then hot weather struck. I was no longer amused with the idea of making a custard on the stove. So, I improvised. What I came up with is probably the easiest popsicle recipe you will find with a whopping 4 ingredients. But, it’s good. Don’t just take my word for it, either. I only got about one bite of the popsicle before my doggy devoured the rest of it. She snuck in while I was trying to take pictures and just started licking… Turns out she’s a fan of yogurt pops!

POM Yogurt Pops

  • 6 ounces vanilla nonfat Greek yogurt
  • 1/2 cup POM 100% pomegranate juice
  • 1 tablespoon agave syrup (optional)
  • Fresh raspberries (blueberries would work well, too)

Whisk together the yogurt and pomegranate juice until smooth.  Add agave syrup to taste and stir to incorporate.

Drop a few raspberries into each popsicle mold, then pour the juice mixture over the raspberries to fill the mold. Place the tops on the mold and freeze overnight.

To get the popsicles to release from the mold, simple run lukewarm water over the mold and pull gently. Enjoy!

    I love the fresh raspberries in the pops! I don’t have popsicle molds and I’ve often thought about buying them, but my freezer is so full all the time I don’t know if I’d ever have room to actually make popsicles :)

    Honestly, I haven’t made home-made popsicles since my kids were little and that’s awhile ago now. Think I shall just have to buy myself some molds and try your recipe for the grand-kids this summer. They certainly look delicious and I like the fact that they got *two paws* up from your beautiful dog!

  16. Oh my do these look delicious! It was near 90 degrees here in Denver today and I could have use one of these yummy frozen treats. I’m the same way with warm weather- makes me less motivated to cook away in the kitchen. This is definitely doable though!
