Fresh Cherry Tomato Salsa

During the summer, I love to make fresh salsa. We don’t have fresh tomatoes from our garden yet, and we’ve only had a few tomatoes from the CSA. So, I picked up a pint of organic cherry tomatoes at the store to make some salsa.  I’ve never made salsa with cherry tomatoes before, but it seemed like a good idea to me. I love the sweetness of cherry tomatoes, so I figured I couldn’t go wrong.

This is a really basic salsa recipe, but it is delicious. If you want to jazz it up a bit, it would be great with some roasted corn or black beans. I’m sure I’ll be making other versions throughout the summer and incorporating lots of new ingredients… But for now, here’s my standard recipe. It’s delicious with organic blue corn chips!

Cherry Tomato Salsa

  • 1 pint cherry tomatoes, quartered
  • 1 red onion, finely diced
  • 1 jalapeño, minced
  • Juice from 1/2 of a lemon
  • 1/4 cup fresh cilantro, chopped
  • Kosher salt

Toss the cherry tomatoes, red onion, and jalapeño together in a small mixing bowl. Squeeze the lemon juice over the mixture, and stir in the fresh cilantro. Season to taste with salt.  Refrigerate for at least 30 minutes prior to serving.

  2. Homemade salsa is probably one of my favorite summer snacks because it’s easy to make, tastes great, and I get to get rid of all of the extra tomatoes that we always have! Great post! :)

  3. I’ve not used cherry tomatoes in salsa before, but what a good idea! Especially since mine are loaded with handfuls of tiny, ripe ones right now. This is very similar to my pico de gallo recipe, except that I use lime in place of the lemon. Delicious!

    1. Lana – Yes, I love to add lime, too. I usually use whichever one is on hand. I made this to take along with us on vacation, so I opted to use lemon since I had a few sitting on my counter waiting to be used.

    Have you tried freezing or canning your recipe? I have loads of cherry tomatoes!

    1. I haven’t tried freezing or canning the recipe. However, to can it, I think you would have to add vinegar or lemon juice to be sure that the acidity is safe for canning.

    I have cherry tomatoes galore this year. I made salsa for friends and neighbors and now want to know how long the salsa will last refrigerated. And is it freezable?

    1. Maddie – Glad you enjoyed the salsa! It will keep in the fridge for a few days in an airtight container. Unfortunately, it doesn’t really freeze well.
