Raspberry POM Walnut Vinaigrette

We’ve been eating a lot of salads lately. We had my parents over for dinner a few weeks ago, and my mom brought along a spinach, strawberry, and walnut salad. Both my husband and I loved it, and I’ve been making versions of it ever since.

When I was contemplating what to do with the pomegranate juice that POM Wonderful sent to me, I decided it would be fun to incorporate into a salad dressing for my new favorite salad! My mom gave me some extra berries that she froze last summer, so I decided to use those in the dressing, as well. The dressing had a nice, bright flavor and paired wonderfully with the salad.

To make your own version of the salad, just top spring mix with some sliced strawberries and walnuts… And, of course, top it off with this vinaigrette!

Raspberry POM Walnut Vinaigrette

  • 1/2 cup 100% Pomegranate Juice
  • 1 cup raspberries (fresh, or thawed if frozen)
  • 1/2 cup walnuts
  • 2 tablespoons red wine vinegar
  • Extra virgin olive oil (about 1/4 – 1/2 cup)
  • 1-2 tablespoons of agave syrup, to taste

Place the pomegranate juice, raspberries, walnuts, and red wine vinegar in a blender and blend until smooth.  Taste and add the agave syrup if the mixture is too tart.  Gradually stream in the olive oil until the dressing comes together.  Enjoy!

  1. I particularly love spring greens with strawberries and walnuts. It is a favorite of mine at a restuarant we go to frequently. The dressing sounds delicious. Love all the uses for Pom!

  10. I love raspberry vinaigrette as an alternative to my usual balsamic vinaigrette. Especially when the berries are in abundance at the market! Great simple recipe — thanks for sharing!
