Whole Wheat Pancake Mix (Ten in 10 – Week 9)

As promised, for today’s Ten in 10 update post, I will be announcing the winner of the FlaxMatters.com giveaway.  But first, I thought I’d share another recipe that uses the milled golden flax that the winner will be receiving!

Saturday’s are a great day for a nice homemade breakfast. Most mornings I eat yogurt and fruit for breakfast, but sometimes on Saturday I will get up and make breakfast for the hubby and I. And, our breakfast of choice is typically pancakes!

Don’t worry, this is still a Ten in 10 post, so these pancakes won’t ruin all of your healthy efforts.  In fact, they’re quite good for you.  Not only are they made with 100% whole wheat flour, I’ve added some flax to the recipe for extra fiber and nutrients.

Here’s the best part… Instead of giving you a recipe for a single batch of pancakes, I thought I’d share an easy recipe for a pancake mix. By measuring out enough dry ingredients for about four batches of pancakes, you can enjoy homemade pancakes in a snap! Plus, this mix doesn’t have any of the junk that you will most likely find in the box mixes at the grocery store.

The recipe can be easily doubled (or even tripled) if you want to have lots of mix on hand. It also makes a great gift. Just put the mix in a pretty airtight jar and pair it with a nice bottle of maple syrup or preserves.

Whole Wheat Pancake Mix

  • 5 cups white whole wheat flour
  • 1 cup milled golden flax
  • 1/4 cup (4 tablespoons) baking powder
  • 1/4 cup (4 tablespoons) granulated sugar
  • 2 teaspoons salt

Whisk together all of the ingredients for the pancake mix in a large mixing bowl.  Transfer to an airtight container.

Whole Wheat Pancakes

(Makes 8-10 medium pancakes)

  • 1 1/2 cups whole wheat pancake mix
  • 1 egg, lightly beaten
  • 1 tablespoon canola oil
  • 1 cup lowfat buttermilk, to consistency
  • Dash vanilla extract

Preheat an electric skillet or a nonstick fry pan to medium-low heat. Spray lightly with cooking spray.

In a mixing bowl, add the beaten egg, oil, buttermilk, and a dash of vanilla to the whole wheat pancake mix.  Stir with a wooden spoon, mixing just until all of the dry ingredients are moistened.  The batter will be a bit lumpy.

Pour 1/4 cup of batter onto the preheated skillet. Cook for 2-3 minutes on each side, until golden.  Serve immediately with your favorite toppings!

    Thanks so much for the mix recipe. I’ve been wanting to make me up some of that. I’m the only one here who will eat whole wheat anything so this is great! I am going to half the actual “make it’ recipe as I only need 3 or so & I’m going to use splenda instead. Looks great!

  2. Great idea! I hardly ever bake from mixes any more, but it would be nice to have some “homemade” mix on hand for days when I feel like saving a few steps.

    Your pancakes look beautiful Jen – love the photo! I can’t wait until fresh berries are in season this summer. They’ve been so expensive around me I haven’t been able to enjoy them as often as I’d like.

    My hubby doesn’t like to eat pancakes because he says they dont stick with him for very long. I bet these would with the WW flour and flax seed.
    Love the mix idea too. This is perfect for when we go camping! I love pancakes when were camping! SU’ed!

    I looked in my grocery store for White Whole Wheat flour and couldn’t find it. Is just plain whole wheat flour ok?

    1. Susie – Plain whole wheat flour is OK, but you might want to substitute some all purpose flour for some of it since the plain whole wheat flour can be a bit heavier/earthier. If you are interested in white whole wheat flour, I’d recommend King Arthur Flour!

    I made these for breakfast Sunday morning….I switched up a couple of ingredients. I added cinnamon to the mix…and instead of canola oil I used unsweetened applesauce, plus I used Truvia instead of white sugar. I topped my pancakes with fresh blueberries….YUMMY!!!
