Chai Spiced Roasted Almonds

I really enjoyed my spicy cocoa roasted almonds a few weeks ago.  They were a great, relatively healthy chocolatey snack… Better than the other chocolate alternatives around the house!

So, I stocked up on a bunch of almonds again this week to make another batch of roasted almonds.  This time around, I wasn’t in the mood for the cocoa almonds (hard to believe I wasn’t in the mood for chocolate… I know!), so I decided to use some of the chai spice blend that I have on hand. If it seems like I’ve been putting that in everything lately, it’s true… I’m loving it!

I loved how the almonds turned out… I’m thinking that I will probably make some of these (as well as the cocoa almonds) for the Food Blogger Bake Sale.  I think they’ll be a big hit, and a nice alternative to all of the cookies and cupcakes (not that there’s anything wrong with cookies and cupcakes!).  They make a cute gift, too!

Chai Spiced Roasted Almonds

  • 3 cups whole almonds
  • 1 egg white
  • 1 teaspoon vanilla bean paste
  • Few drops of water
  • 1/4 cup dark brown sugar, lightly packed
  • 1/4 cup granulated sugar
  • 1 tablespoon chai spice mix (or half cinnamon, half ginger would work)
  • Pinch salt

Preheat the oven to 300°F.  Line a baking sheet with a silicon mat or parchment paper and set aside.

In a mixing bowl, whisk together the egg white, vanilla bean paste, and water until frothy.  In a separate bowl, combine the brown sugar, granulated sugar, chai spice mix, and salt.

Add the almonds to the whisked egg mixture and stir to evenly coat all of the almonds.  Add the sugar and spice mixture, and toss until all of the almonds are covered.

Spread the almonds out on the prepared baking sheet. Bake for about 30 minutes, stirring twice. Spread the almonds out on waxed paper or parchment paper to cool completely.  Store in an airtight container.

    How is Chai pronounced? Is it like Hi, but with ‘ch’ in front? Or is it more like ‘Hey’, but with ‘ch’ in front?

    1. Ben – I have always pronounced it like the word “hi” with “ch” in front… but I am not an expert on pronunciation!

    Perfect little afternoon snack. I like the added flavor with tht spices. Mmmm… Makes the nuts more interesting than plain ones.

  8. Our kids love to make this treat. It is really simple to put together and easy for everyone to participate. We also have found that you can change up the receipt with pecans and walnuts. Sprinkle some of each on a Silpat Baking Mat and they are done before you know it and the clean up is easy…
