Ten in 10 – Week 8 Update

Thank you all for the encouraging words last week… I’m gradually get out of my blogging slump, and along with that, I have been making healthier meals!  I’ve managed to get back on track this week and made quite a few healthy meals and snacks. I’ve managed to stay on track with my workouts, too!

Instead of telling you more of the same about my healthy goals, I thought I’d announce a giveaway this week for my Ten in 10 update…

You may have noticed that I have been using milled golden flax in quite a few of my recipes lately… I love the added fiber and health benefits of the flax, and it is easy to incorporate into baked goods! I find that it works well with the whole grain recipes that I love to try.  Flax can be substituted for egg by using 1 tablespoon of the milled golden flax and 3 tablespoons of water in the place of 1 egg in recipes.

    I registered! I’ve never actually tried flax, but my roommate is crazy over it. It seems like a way to sneak a ton of healthy bits into my cooking, which I think would be great for me and my non-veggie eating boyfriend.

  7. just registered! i would love to try flax seed — i have been trying to eat more healthfully lately and also eat in a way that is better for the environment — i just signed up for my local CSA! my boyfriend is vegetarian and so i eat a vegetarian diet for about 80+% of my meals and am beginning to realize how important it is to understand the nutritional value of what you are eating. i love to bake and flax seed would add a little extra bonus nutritional value to the sinful baked goods i will make in the future!

    I would also love to try flax seed in my baking – my dad won’t eat anything he thinks is “healthy” or involves the word “fibre” but I know that if I could get flax into some killer muffins, he would never know the difference!

    Just registered! So funny – I was watching an episode of Martha Stewart on my DVR today and she had a woman on talking about allergen-free baking today. She mentioned the flax substitute for eggs and then I pop over here and see your giveaway! Would love to give it a shot.

  13. Just registered and I am very excited about trying flax in baking.

    For 2010, hubby & I are tying to eat healthier and lose some weight. Honestly, I thought flax was one of those “weirdo” things that only health-nut-freaks use. But after viewing your amazing, lip-smacking recipe for healthy honey beer bread … let’s just say I may be a changed woman! I think I’m ready to give flax a chance! :)

  14. What a great (and healthy!) giveaway! I really believe in the health benefits of flax seed and I love baking with flax seed meal – I put at least a little in nearly everything I bake (muffins and especially breads!). I stir some in my yogurt and even take flax seed oil caps!

    Oh, and blueberry? My favorite flavor. :-)
