Bea - Yes, you can really use any fish you like. I like mahi mahi because of the mild flavor... Haddock or tilapia would both be great, as well.

Wow, this is one delicious healthy meal. Is there any alternative fish aside from mahi mahi for this dish? We don't have mahi fish in our place.

Just made this for dinner - used tilapia instead of mahi mahi and it was SO good!! I am also a little hesitant to make seafood - I grew up thinking I was allergic to it (long story) and just recently found out that I'm not, so now it's like I'm discovering a whole new possibility. It makes it a little intimidating to cook something you aren't even used to eating - but his turned out so yummy - my hubby can't stop raving about it!

Thanks!

Something light, refreshing, flavorful and colorful. We happen to have a lot of mangoes right. Thanks for the inspiration to make some.
