Double Chocolate Chunk Cookies

Yes, that is what my husband said when he tasted these double chocolate chunk cookies.  I expected them to be good, but I didn’t realize they’d be that good.

You may remember that I mentioned the Chocolate Chunk Cookies from A Chica Bakes in my Friday Favorites a few weeks ago.  The cookies were made with Scharffen Berger chocolate, and I was dying to give some a try.  I had been hearing all about Scharffen Berger on various blogs, and knew it would be worth ordering online to give the cookies a try.

Lucky for me, Scharffen Berger was kind enough to send me samples of their chocolate baking chunks (enough for the cookies – hooray!) and also some of their unsweetened cocoa powder.  Instead of making regular chocolate chunk cookies, I decided to adapt the Martha Stewart recipe from A Chica Bakes a bit to make double chocolate chunk cookies instead. After all, for a chocolate lover like me, the only thing better than chocolate chunk cookies is double chocolate chunk cookies. Right?

While I was given the opportunity to try their products for free, I can honestly say that I will be buying more in the future. I love to bake, and I find that using high quality chocolate (as well as other ingredients) really makes a difference in my baked goods.  I wholeheartedly agree with my husband that these were some of the best cookies I’ve ever made…  I think they were so good because of the smooth, rich flavor of the chocolate chunks in the cookies.  Made with “ordinary” chocolate chips or cocoa powder, I really don’t think the cookies would have been nearly as good.  I plan to order some more in the next few weeks to use for my Christmas cookies this year (unless I can find some at Hershey’s Chocolate World, as one commenter mentioned on my Friday Favorites post).  I think these cookies will make it into my holiday baking rotation this year, too!

Double Chocolate Chunk Cookies

(Adapted from A Chica Bakes – Martha Stewart recipe)

  • 2 cups all purpose flour
  • 1/2 cup unsweetened cocoa powder (Scharffen Berger)
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup dark brown sugar, packed
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 12 ounces semisweet chocolate chunks (Scharffen Berger)

In a bowl, whisk together the flour, cocoa powder, salt, and baking soda.

In a large mixing bowl, cream together the butter and sugars (this can be done by hand or in a stand mixer). Add the vanilla extract, and beat in the eggs one at a time.  Gradually mix in the dry ingredients, beating until all of the dry ingredients are incorporated into the batter.

Add the chocolate chunks, and use a wooden spoon to stir the chunks into the batter.  Refrigerate for at least one hour. Meanwhile, preheat the oven to 350°F. Lightly grease your baking sheets (or line with parchment) and set aside.

After the batter has been refrigerated, drop tablespoons of batter onto the prepared cookie sheets. Bake for 14 – 16 minutes. Allow the cookies to cool slightly on the baking sheets (2-3 minutes), then remove the cookies and transfer to wire racks to cool completely.

Stored in airtight containers, these cookies will last for a week.  They are absolutely delicious dunked in a cup of coffee… trust me! :)

    Cookies are so much better with chocolate chunks than chocolate chips (more pure chocolate taste in each bite), and these Scharffenberger chunks look amazing. Thanks for posting about these! I’ll definitely give them a try.

    I love the photo of the baked cookies on the cooling rack. They look so dark and scrumptious!!! I’m not crazy about Scharffenberger chocolate chips; it has a fruity undertone. Maybe the chunks and cocoa powder taste better. You’ve convinced me to (think about) giving them another chance :D.

    Yum! I’ll have to see if I can get some of those baking chunks – I think those are the one type of chocolate that Scharffen Berger doesn’t process with peanuts/nuts. Bookmarking this recipe!
