Friday Favorites – Episode 19

Vacation is a wonderful thing, isn’t it?

Unfortunately, coming home from vacation isn’t. Don’t get me wrong – it’s always nice to be home.  It’s just that coming home from vacation means laundry, cleaning, and getting back to work.  So, needless to say, I am glad that it is finally Friday! I’m ready for the busy “back from vacation” week to be over. In celebration of the upcoming weekend, here are a few of the posts that kept me going this week:

  • It seems that everyone’s gardens are bursting with zucchini and squash right now.  This Sausage and Zucchini Bake from Calm in the Kitchen sounds like a delicious way to use it up. It’s like a low carb faux-sagna!  If I had sausage on hand, I would probably make some right now.  Unfortunately, I will have to wait until I go to the store.
  • This recipe for Calzones comes from Sugarcrafter – one of my fellow Penny Pinching Pantry Raiders!  I’m happy that I discovered Tracy’s blog through the challenge.  With bread from Artisan Bread in Five Minutes a Day, not only is it delicious but it’s quick, easy, and cheap. What more could you want?
  • I was excited on Tuesday when I saw this Irish Soda Bread from The Sophisticated Gourmet. I was making my Cajun Bean Soup for dinner and I knew I could whip up a quick batch of bread to dip in the soup.  While Irish bread and Cajun soup may sound like a strange combination, I assure you that they were delicious together.
  • This Jerusalem Salad from La Fuji Mama makes my mouth water each time I look at the recipe. It is fresh and healthy and looks absolutely delicious! In addition to zucchini, many people have cucumbers in their gardens and CSA shares right now, so this is another perfect recipe to utilize the produce that is in season.

Finally, I want to take a moment to thank Danielle from Delightfull Sweet for giving me a MeMe Award a few weeks ago. Somehow in all of my vacationing I forgot to mention it before. Thanks again, Danielle!
