Hi, Esty - I would probably leave the green beans and oil separate to keep them overnight. Hope you enjoy the salad!

Hi I just made the basil oil and it smells divine:)
I was wondering, if I cook the beans a day in advance, should I leave them plain or toss with oil? (I'll leave the vinegar and tomatoes to add in right before serving)

When it rains green beans at our house, it POURS! My mom always plants way too many with the expectation that she will kill at least half the plants.. but they always end up heartily surviving! I am always impressed. But--- it leaves us with a ton of beans! What a great use for them.

That looks really good! I love your recipe for garlic basil oil, and I appreciate your food safety warning. Those beans look like good BBQ food, and the oil would be nice over some lightly toasted French bread. Yum!

I've been thinking about pickling some green beans myself. I'm guilty of not using those veggies up in time too.

Thank you all for the sweet comments! I had scheduled all of these posts while I was on vacation, and I am always happy to read comments when I get home.

And Kamran - yes, it probably is the same dish. I think I inherited it from my mom when I went to college.. and it's moved with me 2 or 3 times since then!

Jenn - You may be able to find a CSA... I love mine! If you have a farmer's market that is close that has fresh, local produce, that's great, too. The closest farmer's market for me was a 45 minute drive.
