Lemon Grilled Chicken and Fennel Salad

One of my favorite stops on the Boston North End Market Tour was Alba Produce.  I love cooking with fresh fruits and veggies. It is always a treat to get to go to the farmers’ market on the weekends and pick out ingredients for the coming week. On the tour, we sampled fresh fennel, and ever since, I have wanted to make a fennel salad.  I had a bit of trouble finding fennel, but eventually I came across some on one of my farmers’ market trips.

Since the weather was nice last week, I decided to cook outdoors and make a simple grilled chicken marinated in lemon to accompany my fennel salad.  It was a delicious and healthy dinner – perfect for spring!

Chicken Ingredients:

  • 2 boneless skinless chicken breasts
  • Juice from 1/2 lemon
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon Italian seasoning

Fennel Salad Ingredients:

  • 1 bulb fennel, thinly sliced (core removed)
  • 1 navel orange, peeled and cut into segments
  • Juice from 1/2 lemon
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon fennel frawns (leafy green tops, thick stems removed), chopped
  • Kosher salt
  • Freshly ground pepper


Pound out the chicken breasts to 1/2 inch thickness between two pieces of plastic wrap.  In a medium bowl, combine the lemon juice, olive oil, and Italian seasoning.  Add the chicken breasts and evenly coat with the marinade.  Cover and refrigerate for 30 minutes.

Meanwhile, place the fennel slices and orange segments in a medium bowl.  Add the lemon juice, olive oil, and fennel frawns.  Season with salt and ground pepper, and toss to evenly combine. Cover and refrigerate until ready to serve.

Preheat the grill (or grill pan) to medium heat.  Grill the chicken for 3-5 minutes on each side, ensuring that the internal temperature is 165°F.

  1. Wonderful meal! I have the chicken defrosted and know where I can find a fennel bulb (mmm). If the spring gods are good – it will be a perfect springtime meal tomorrow.

    I need to try this fennel salad, I am so good at trying new foods but for some reason unknown to me. I had kept myself away from it. I always tell myself, one day I will buy some to make a salad. But that day I try to avoid. Hope you or your readers can tell me more about it.
